WHere is a simplified take on a drink featured on a new drinks list. It's a batch prepared mix which is packed full of essence of the Christmas time, rendering it ideal for your festive gathering. Reserve the remaining citrus syrup to use in brunch beverages, puddings, or to mix more rounds of bikinis.
Bikini Recipe
Serves 10 guests
To make the Clementine Cordial (makes 750ml)
300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar
For the Premix (yields 850ml, serving 10)
400ml good quality vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (see above)
Whole cranberries, as a garnish
Mandarin essential oil, to finish
Instructions
For the Syrup: Put all the components inside a pan, bring to a gentle boil, agitating so the sugar melts. After that, remove from the burner and let it to reach room temperature fully. Transfer into a sealable bottle, close it and store chilled, it can be stored for up to one month.
For the Premix: Mix every liquid ingredients into a sizeable container, allow it to infuse for one hour, then pass it through best through muslin, making it fully clarified.
When ready to serve: Measure 85ml of the premix into your cocktail shaker filled with ice, and stir gently for a minute to chill. Strain into a frosted cocktail glass or a similar vessel, garnish with some cranberries adding the final touch by giving it a light spray of mandarin oil above the glass.
